I'm in a Turkey Coma: 5 Ways to Use Leftover Turkey
We've already established that one thing I love about Thanksgiving is the leftovers. My mouth is still watering over them as I write this. But, honestly, I love the sides more than anything. There are only so many days that I can eat turkey before I get bored of it. And since I apparently ordered and cooked a turkey for 100 people when we only had five people at our dinner, you could say I have a few leftovers in my fridge. So here are five ways to use leftover turkey that aren’t just your average, boring heat it up in the microwave or stove. Hopefully it will help you get out of the turkey coma.
1. Turkey pot pie
this is delicious and super easy. I’m actually making it tonight. You can even use leftover gravy for an even tastier dish. And, as another added bonus, it's a great way to use pie crusts if you have any leftover. Confession, I don’t make pie crusts from scratch. But I almost always buy two packages just in case I mess up. Here is a really great recipe that I use, but honestly, all you have to do it put one crust in the bottom of a pan or pie plate, then add the turkey, some veggies, potatoes, gravy, and a little salt and pepper. Then put the other crust on top and bake for about 30 minutes. If you choose to use potatoes as part of your vegetables then I would cook them a little first. Otherwise they’ll be raw.
2. Turkey soup
You can actually do this with the turkey carcass as well. I did this last year and it was great. Just put the carcass in the crockpot with a little broth and seasoning and all the meat will fall off the bone. Then you can add veggies and other ingredients of your liking to make a really tasty soup. Feel free to check out this recipe over here.
3. Make chicken salad with turkey
You can use my recipe or another of your liking. The great thing about turkey (in my opinion) is that you can't often tell the difference when you're mixing it with a lot of other ingredients.
4. Fancy up your turkey sandwich
Turkey and mayo on bread gets blah really fast (actually, it really is just blah). Instead, try my open faced turkey sandwich idea or make an awesome panini. You can even use leftover cranberries or stuffing with this idea as well.
5. Turkey quesadillas
Quesadillas are so easy to make. If you have a panini maker or some kind of sandwich press all you really have to do is put some tasty ingredients between two tortillas and cook it like you would a sandwich. I like cheddar cheese or pepper jack cheese, a little chili powder, and meat. I usually use chicken, but obviously for this recipe you would use turkey instead.
