Easy Breakfast Taco Recipe

Happy Monday everyone! It's freezing here, but I'm super excited to be back on a regular blogging schedule (fingers crossed anyway). I love tacos. I mean l-o-v-e them. In every form. I also love breakfast. So breakfast tacos are heaven to me. And it's one of the things that Mr. T and I love to make on the weekends. One thing I really love is that it's so easy to combine different ingredients that you have at home. Have some eggs? Awesome. Have some cheese? Good. How about some veggies and seasonings? Even better. Throw it all in a pan, then in a tortilla, add some salsa and you're good to go.

And of course I have a recipe for ya. Here's an easy breakfast taco recipe that's super easy. (See the bottom of the post for a printer version of the recipe)

Tasty breakfast tacos ingredients

Here's what we used:

  • 6 flour tortillas
  • 1/2 pound of bacon
  • 1 onion, chopped
  • 1-2 lbs. of asparagus, chopped into 1-2 inch pieces (I'm not totally sure how much we used, I just bought a bunch at the store)
  • 1-2 cups of shredded cheese (we used sharp, but you can use whatever kind you like)
  • 6 eggs
  • Homemade salsa (found in this post over here)
  • 1-2 habanero peppers, chopped (you can add more if you want it spicy. Mr. T likes things on the milder side)
  • Salt & pepper
  • 1 TB Olive oil
  • Milk (probably about a tablespoon or so, it's just for scrambling the eggs)

And here's how we made them:

  1. Cook the bacon.
  2. Eat a couple pieces of bacon and crumble the rest for the tacos.
  3. Put olive oil in pan and let it warm for a bit. Add the asparagus to pan and let them cook for about 5 minutes (you'll want to flip them around some so they don't burn).
  4. While the asparagus is cooking, we mixed eggs, milk, salt, and pepper in a bowl. It's basically the same way you'd do it for scrambled eggs. Tasty breakfast tacos ingredients veggies
  5. By this time the asparagus should be getting a little softer. (You don't want it to get too soft because then it will be mushy and gross in the taco.) Add the onions and habanero peppers. Mix it all in with the asparagus and let it cook for about 5 minutes more or until the onions are soft. You can add a touch more olive oil if you need to.Tasty breakfast tacos ingredients eggs veggies
  6. Add the eggs to pan and scramble. I pushed the veggie mixture to one side of the pan so I could scramble the eggs before mixing them with the veggies. I find if you mix the eggs in with other things too soon you don't get a really good scrambled egg. Instead it kind of sticks to everything and it's gross.Tasty breakfast tacos ingredients eggs
  7. Add the cheese. (You can reserve some to put on the tacos at the end if you like) Let it melt a little.
  8. Add the bacon and let it cook for a couple of minutes more. You essentially just want to get everything good and mixed and make sure the bacon is hot and the cheese is melty. If you cook it too long the cheese will burn.
  9. Place tortilla shell on a plate, put the mixture on the tortilla, and top with as much salsa as you like.Tasty breakfast tacos

This recipe will make about 6 tacos unless you're pigs like we are and stuff them really full.

We actually made these at Mama C's and I can't wait to make them now that we're in the new house. And now I'm totally sad I don't have breakfast tacos.
